If I use a PC windows machine to run xplane11, can I use apple MACs to drive additional monitors for multiple views from the flight deck?

Yes, you can network machines with different OSes together without a problem. Please note that the home use license requires you to purchase a copy of X-Plane for each machine in a networked sim.
