Does X-plane 11 support the Matrox Dualhead2go for the Mac? I have a iMac with 27" display

and want to connect my Matrox Dualhead2Go and two other monitors, I see info on the Matrox TripleHead2Go

but nothing for the Dualhead2Go.

It should! I don't have the hardware to test it, but so long as X-Plane sees a single, double-wide display, it should "just work" for configuration purposes. You would not need to check the box in the graphics configuration for the TripleHead2Go, though, as it has one purpose only: to apply zoom commands to the center monitor only when in the 2-D cockpit.
