I wanted to add DME to the panel in the stock 172SP and so saved it as a new plane after adding the instrument. Nothing else was changed. Now the engine noise is completely different than the stock 172SP.

The default 172 may have had custom sounds. Did you copy the entire default Cessna 172 folder before making your changes to the panel?

Here are the steps I used:

In Plane Maker I selected >File>Open>Aircraft>Cessna172SP>Cessna_172SP.acf>Open Aircraft>Added DME to the panel>File>Save As> Then renamed aircraft.

In X-Plane: I open this aircraft and note the new engine noise.
