iMac OS X Yosemite up to the task?

I have an iMac Retina 5K, 27 inch, late 2014, 3.5 GHz Intel Core i5, 8GB 1600 MHz DDR3, graphics AMD Ratheon R9 M290X 2048 MB - will this be capable of smoothly running X-Plane 10?

Any recommendations for additional monitors (want to fit one to left, one to right) to achieve 180 degree view?

Depends on your rendering settings. I guess you're fine, but watch out for HDR ... An i7 processor is faster of course and adding RAM is cheap. VRAM of 2 GB looks good.
