Why does X-Plane install to Desktop?

Question

Does it run faster, is more responsive or what?

As it is contrary to normal practice, on a Mac, there must be a good reason would like to be educated!

2017 iMac, 4.2GHz i7, 40GB RAM, 500GB SSD,

It installed on the Desktop because you let the installer do it so.

You can choose to move the whole folder (not only the app) wherever you want.
