I want to see the details stored in the pilot log from xplane and do some reporting from it (basically pull the data and make some charts in excel).

The text file is located under Output > logbooks. X-Plane Pilot.txt is the main one by default, unless you're created and used a new one.

In X-Plane it's found under File > logbook.

I have no files in that directory, however I see data under File>Logbook.

Any Ideas?

I suppose your OS could be hiding the document, but as far as I know, if the file is missing or deleted, X-Plane will recreate it at the end of the next run. It will log flights as long as the plane has been active (not paused) for 3 minutes or more.
