I ajusted my Logitech Joystick to be the least sensitive possible, but the plane I fly is always yawing, pitching and rolling a little as if it was suspended in mid-air and dancing around lime a puppet.  Even when it is flying at 180 Knots in perfect weather (no windshear, no turbulence, nothing to interfere with the flight.

Is there a way to damper the controls to make the flying experience stable ?

You could have a "noisy" joystick, especially if it is pretty old. You can try recalibration to adjust the nullzone automatically, or adjust the stability augmentation sliders in the joystick settings screen. Here is some troubleshooting info from the manual.
