We do have an option to change the language to Italian in the simulator, but it mostly affects the menus, and not all of the options are translated from English. ATC dialogue remained in English for me, but that may be because my computer's language preference is set to English.
I would recommend you download the free demo here. Go to the settings menu -> operations and warnings and at the top of the window you can change the language to Italian. See if it is acceptable for you.
