the weapons/ordinance tab does not appear.

i have recently installed the demo version, installed the pay version twice, and done one update, still, no weapons. what am i missing?

The weapons/orndnance tab only appears for aircraft that have had weapons attached in Plane Maker. In the default sim, only the Saab JA 37 Viggen comes with weapons equipped. If you would like to add weapons to other aircraft, the process is explained in the weapons section of the Plane Maker manual.
