Hi John,
I think to accomplish this you would need to do two things: perform the flight while in the cockpit and save it as a replay. Then you can load and play the flight. You can change your view while it is playing and use the recording function to make an .avi file during that.
Make sure to set up your movie specs before starting the AVI movie recording. All of these options are under the file menu.
