I think the only default aircraft that is equipped to fight forest fires is the Bombardier sea plane. You might look do a search online to see if there are any freeware helicopters that are set up for it.
If not, it would require making the adjustments yourself via Plane Maker. Under the Standard menu choose Weight and Balance. There you can select the load: water, fire retardant, etc. Save the changes and go fly.
