How often is the approach database that is used in the professional version updated?

I am considering purchasing the professional version but have questions about the approaches and how up to date they are kept with the real world.  Also will have have all the FAA approved approaches to all the airports in the U.S.?

I believe the navigation info that's available in the demo and home use versions will be the same in the Pro version. It is not one of the differences listed on our info page at least. You can purchase real licenses to use with X-Plane, and they will work with even the demo if you'd like to investigate if it will work for you before purchasing.
