In the flight control Sensitivity and Aircraft Stability window, you can use sliders to set linearity and sensitivity of the roll pitch and yaw controls.

How does one make the settings "permanent" such that they persist when the simulator is restarted (ie computer rebooted and Xplane restarted)?  In other words, how does one "save" these settings for a given aircraft?

Hi, it should be permanent as long as you quit properly X-Plane. If the sim crashes, x-plane will not save any of the settings chanted during the session.

Where have you installed x-plane? Laminar Research recommends to install it on the desktop, so that the sim can access its own files.

You should also include your .../X-Plane/log.txt file and give as many details as possible.
