how to set your own values to adjust pitch settings?

Question

All airplanes are bouncing up and down due to pitch instability. Is there any file where parameters may be adjusted by the user to set the axis of pitch, roll and yaw? For instance a 737 has strong inercia and cannot move its nose up and down as an small plane. Have tried all normal settings found in xplane without success and it´s not a problem of mine of not knowing how to pilot an airplane, I´m a real full flight sim instructor.

I am not with Laminar Research; just a flight simmer.

Although it has been applied to one particular hardware item it can be applied to other items as well.
