Can you reproduce the issue with any default aircraft? The only time I've seen camera issues like that is when I have X-Plane windowed and I've clicked somewhere else so that my "focus" isn't on X-Plane. Then if I try to use the mouse to move the view it acts very weird.
Otherwise, please try moving, renaming, or deleting preferences to see if something got set by accident.
