Can I use/calibrate racing car pedals like Thrustmaster T300, T500 or Logitech G29 as a rudder?

Or whats the best configuration as rudder for Hotas warthog

X-Plane will see anything like gamepads and racing wheels as a collection of buttons and / or axes, so as long as you set it up correctly in the Joystick Settings screen it should work. It won't come with a pre-configured set up file so you will have to assign everything manually. More info is here.
