I've downloaded X-10 'demo installer'  to my Mac but I don't see any X-Plane 10 folder, and no scenery or 'scenery slect' button, so does this mean that I haven't downloaded the real program, just the demo?

There are scenery and time restrictions on the demo because it's free. It only comes with scenery for SeaTac airport. If you have purchased X-Plane (such as the digital download edition) you will need to use the installer found on the Install / Update page of X-Plane.com. Download it, unzip the folder, and run the installer program inside to actually install X-Plane.
