The store page on Steam for X-Plane 10 didn't specify a joystick was required. I couldn't find a way to map keyboard keys for the yoke.

A joystick is not required to fly in X-Plane--you can use the mouse. You have to "grab" the simulated yoke by clicking on the white plus sign near the center of the screen. It can be hard to see--check this section of the manual for a screenshot with it circled. Then just move your mouse around in the box to control the plane. Click a second time to "release" the controls.
